Default Phyllo

This is just a shout out to Phyllo! I have made all sorts of stuff with just one sheet- only about 9 carbs, depending on the sort you use. I stuffed a salmon cream cheese caper mixture in one, a keema in another. Just a warning- since you do end up using a fair amount of butter, I recommend a split bolus- some insulin now, some later, due to the fat.

It feels like I am eating puff pastry, which I used to love!

All of those 9 (10.7 here ) carbs in one sheet of filo/fillo/phyllo pastry come from white flour, which has a very high glycaemic index.

I won't touch the stuff, and if I were diabetic, I would run screaming in the other direction. Just my opinion.

In the grocery store. And as I explained, since there is butter required to work with the dough, it prevents a rapid rise, which can be compensated for with insulin spread out over a period of, say, an hour. Or if you are on injections, using R instead of Humalog of Novalog.
Also, I don't have a problem with small amounts of high glycemic carbs, as long as I start out within range (under 100).
It seems odd to say what you would or wouldn't do if you had a disease that you don't have. How could you possibly know?
