I have never had one but bought some yesterday. Anyone want to give me a few suggestions that i can with them? thanks

My DH & I cut them in half, take out the seed, (leave on the peeling) add a little salt substitute and eat them with a spoon. We usually split one every other day as I'm afraid I might get addicted to them They are great mixed with other foods, but I love the straight avocado taste.

They are great cubed as part of a cobb salad, or sliced on top of taco salads. Sometimes on top of mexican dishes we also cut one and lay the slices with cheese on the top.

I cube an avocado and mix with some shrimp, 2 TBS of mayo,1 TBS of LC ketchup and a little diced celery. Fab salad for lunch.

1/2 avocado with tin of tuna, some mayo, spices. Tuna salad plus! Add some veggies and it's a great lunch. I also love it with chicken.

For a snack I would mash 1/2 of one with cream cheese.

Guacamole to put with a taco salad

Serve tuna salad or egg salad in it

Put slices on top of a cheese burger

Make into a soup

(Can you tell I learned to love avacados. PreLC I hated them along with all other veggies )

Silly question maybe, and I am not a huge fan of avocado, but the hubby wants to know how you keep it fresh if you don't use it all at once. Any suggestions?

Keep the stone in!

Basically assuming you want to use half, cut it in half, make sure the stone stays in one half and bag that and put it in the fridge.

Without the stone, avocado will brown really quickly even with a little lemon juice.
