Default Butter chicken to die for!!

Here's an excellent recipe I've been making for years..truly scrumptious!!
BUTTER CHICKEN

25 gms butter
1 onion [finely diced]
1 tspn minced garlic
600 gms chopped boneless chicken breasts
1/2 tspn each of ground ginger
cinnamon
salt
tumeric
chilli seasoning
300mls cream
1 -2 tblspn tomato paste
garam masala


Melt butter and saute onion and garlic.
Combine spices and toss chicken until well coated.
Add chicken to pan and saute, stirring until golden.
Stir in cream and tomato paste.
Sprinkle with garam masala.
Cover and simmer 10 mins.

I promise this is totally delicious..serve with brocolli or /and Sherrie's Tortillas.

Sherrie's Tortillas

1 8oz pkt cream cheese
3 eggs
3 tsp splenda
1/2 c atkins bake mix
1/2 tspn baking powder
1/2 tspn garlic powder
1/2 tspn onion powder
1 tblspn parsley flakes
1/4 c buttermilk

Mix thoroughly.

Use parchment/baking paper..draw a circle on the reverse side of the paper as a guide[approx 8-10 inches]
Spread a thin layer of the mixture onto the paper and nuke for 1 minute.
Take it out and cool, gently peel off the paper..you should get about 20.
Then lightly toast in a dry pan on the stove on both sides.{store in the fridge]

They don't get stiff at all and warm right up on about 20 seconds of nuking.
[under 1 carb per tortilla]

I made these tortillas the other night for the first time and they were perfect for scooping the curry up.Unfortunately we had no left overs to store in the fridge as the family polished the lot off!![ double batch next time!]
