Talking no bake cookies..yum

some of you asked for this recipe so here it is!!

Ok I am not sure where I got it..just one of those surf days LOL

I would use xylitol...it comes in same form as sugar...comparable usage as well....I found mine at a health food store...but I have seen it online as well

these were my favorite before I went on lc...so I was glad to see a recipe come out...they are a little on the high end as the oatmeal...but I save them for I deserve a treat day

No bake cookies
2 cups splenda( I use xylitol)
2 sticks butter-unsalted
1/2 cup cocoa
1/2 cup peanut butter
1/4 cup no sugar coconut{optional}
1 tsp vanilla
3 cups keto oatmeal
1/2 cup whippimg cream


mix cocoa,splenda,butter,whipping cream in a pot,bring to a rolling boil for 1 minute.remove from heat add vanilla,peanut butter,coconut,oat meal.
drop by tsp on wax paper.makes about 30 cookies.ENJOY!!

I put mine in the fridge to harden, normal no bake cookies dry quickly, but these seem to take longer.

sorry not sure of carb count...but probably a little higher as they have oatmeal!!

I am curious - have you ever tried this with liquid splenda? Do you think it is thing enough that I could use liquid "splenda" to make it?

I am trying to calculate the carbs using fitday, etc. but I am not sure what's in "keto oatmeal"....I will post my results eventually...

So far, if you used liquid splenda and you got 30 cookies...they would each be 1.1 net carbs plus the carbs from the keto oatmeal. Anyone know what the carb and fiber count is on 3 cups of Keto oatmeal?

I don't know the keto oatmeal...I splurged and used regular oatmeal LOL

as for the liquid splenda...I am not sure what it would do...you could always try it....my guess is it might not set up like its suppose to...but if it still tastes good I say go for it

the volume is what I would think about...but I have never used a liquid sweetner before....would it have enough volume to compare to the 2 cups sugar?

I say go for it and see what it does ....good luck

It sounds to me like these would taste like ANZAC (Australia New Zealand Armed Cavalry) biscuts (cookies). While I was abroad I fell in love with them, the coconut and oatmeal were divine. I will have to try this, and find the keto oatmeal as well.
