Default Raspberry Cheesecake Squares

Ok guy this one comes out of the LowCarb Energy magazine. Its both very good and easy!

1 package sugar-free raspberry gelatin
1 cup boiling water
2 8-ounce packages cream cheese, softened

Sprinkle gelatin into boiling water, and stir until well dissolved. In bowl, beat cream cheese until very creamy. With mixer running, add gelatin, 1/4 cup at a time, and mix until thorughly combined. Pour into 8"x8" pan, and refrigerate until firm, about two hours. Makes eight servings.

2grams carbs per serving.

I make something similar to that except I use.
1 box sugar free jello
1/2 cup hot water
1/2 cup heavy cream
2 8 oz boxes of cream cheese

I disolve the jello in the water. Then mix the rest of the ingredients until fluffy. Then refrigerate. My favorite is lime. Reminds me of key lime pie.

I make this with lime jello and add some lime juice which is a freebie, then I lower the carbs by using the whipped cream cheese that only has 11 carbs in 8 oz. It is really good, I use my mixer until I have whipped some air into it. I also made Strawberry, both were really good.

Made these last night with Splenda and Kool-Aid. They are good but were a bit tangy so next time I will make them with a half a packet of Kool Aid.

I made these yesterday and they are VERY tasty! Not to mention super easy to make. I'm looking forward to trying the recipe with different flavors of SF jello.
