Default Lard?

Hey folks,

Any of you regular users of lard? Would you recommend any other animal fats before lard? I'm looking for a new fat/oil cooking alternative to avoid using olive oil for higher heat, and to avoid all the other unhealthy oils.

Wondering how you use it, and if any of you has used it to make your own mayo. Any suggestions would be helpful!

My father used to cook everything in lard & afterwards it all went into a bowl. Made lovely dripping sandwiches from them when we were kids. I might give it a try myself instead of olive oil, it's so expensive!

Yes! Olive oil is expensive, and sometimes, the flavor just does not lend itself to the dish. So I'm looking for something a little more "neutral" tasting but still a whole food. Trying to break free of Canola, and other processed oils. Also looking to make my own mayo to avoid the dreaded soybean oil! Eeeeekkkk!

I use lard all the time.

I love salmon pan seared in lard.

Thinly sliced cabbage cooked in lard, garlic, crushed red chilis, and onion powder.

Lard seared pounded chicken breast.

Lard imparts of very sublte smokey taste.

In fact--I just rendered a pound of smoked bacon for the lard.

Brussel sprouts and parsnips roasted in lard, red chilis, garlic, and a cachere seasoning.

I could go on forever expounding the tasty benefits of lard.

Lard is one of my favorite cooking fats.
