Cheese Straws
These turned out GREAT! I do the Schwarzbein Principle so we don't count "net" carbs, but for those of you who do, these are free. For those counting full carbs, 9 cheese straws = 1 gram of carbs (based on 145 2" straws). That's right, 1 gram! They aren't quite as good as Geraldine's Bodacious Cheese Straws, but they are much more carb friendly. If anyone sees a problem with the way I've calculated carbs, please let me know.
I got this recipe from dailyinbox.com: the recipe file: Southern Recipes, Places and Traditions and made the necessary changes.
15 ounces extra-sharp Cheddar cheese, grated
1/4 cup (1 1/2 sticks) butter
2 cups CarbSense Zero Carb Baking Mix
1 1/4 teaspoons baking powder
1/2 teaspoon salt
5 to 6 dashes of Tabasco sauce
1 teaspoon cayenne pepper
5 tablespoons of cold water (as needed for moisture)
To Prepare:
Let the cheese and butter stand at room temperature until softened. Sift the baking mix, baking powder and salt together. Place all ingredients into food processor, add Tabasco sauce and cayenne pepper and blend until mixed well. Add the cold water by the tablespoon full as needed for moisture. Place in a cookie press fitted with the large star tip. Press into 2-inch lengths on ungreased baking sheets. Bake at 300 degrees for 15 minutes. Reduce the oven temperature to 225 degrees. Bake for 10 - 30 minutes longer or until crisp.
Note: Bake the cheese straws slowly to achieve crispness. If the cheese straws are baking too fast, leave the oven door open. You may also freeze after baking.
Yields: About 120 (I got 145)
Tip: put the cookie press, without any metal parts, in the microwave for a few seconds to soften the dough, which is VERY stiff. This way it will be easier to press out the dough, otherwise it's going to kill your arms)
