Default Egg Crepe Sandwich!

So I've been making the egg crepes ( with egg beaters, vanilla or torani SF syrup, cinnamon ) for breakfast most mornings, and topping with SF Maple syrup ( or blending that into the crepe mixture sometimes ) and just got an idea!!!

I was reading thru the Quizno's web site, trying to find a carb count for dressing, and saw this::

<<Pancake Sandwiches
Each sandwich layered with egg and ham or bacon between two glazed pancakes

Ham and Egg
Thinly-sliced honey smoked ham and scrambled eggs between two glazed pancakes

Bacon and Egg
Crispy smoked bacon and scrambled eggs between two glazed pancakes

So I'm thinking...why can't I make smaller, thicker crepes ( maybe even using a round holder like you do for poached eggs? ) with the maple syrup baked in, and them fill two of them with bacon and cheese, or ham and cheese? More of a McGriddle I guess!!!

I keep forgetting to buy the round thingies -- I bet they'd look a lot prettier that way!!!

You could but 2 or 3" biscuit cutters (with open tops) for a couple of dollars each. They sound wonderful too- I'm deep in induction so I can't wait to try this in a few weeks.
