Low Carb Sandwich Loaf
INGREDIENTS
2 3/4 cup gluten free low carb baking mix 1
1/2 cup heavy cream
1/2 cup water
1/2 cup coconut oil, melted
2 tsp cider vinegar
6 eggs, well beaten
1 tsp sea salt
2 tsp baking soda
DIRECTIONS
Preheat oven to 350 degrees.
Line a medium size loaf pan with parchment paper. Lightly grease the ends.
Combine all ingredients in a large bowl. Mix well so there are no lumps.
Spread into loaf pan.
Bake for 1 hour.
Allow to cool before removing from pan.
Store in the fridge for several days in a sealed container.
Also, I like to pre-slice the loaf, then place waxed paper between the slices and freeze. The wax paper prevents the slices from sticking together. You can just take out the slices you need without thawing the entire loaf.

This bread is low carb and tastes great! Doesn’t crumble at all. Toasts nicely too.
