portabella mushroom pizza
I know this is a common way to do LC pizza, but I never tried it before yesterday. It was really great!
I basically used the version from sugar free Sheila's site: large portabella mushroom cap, filled with tomato sauce, Italian herbs, shredded mozzarella, topped with pepperoni.
I used fennel seed, sage, and oregano which gave it a great Italian flavor. Also put some oil into the dish around the mushroom and it crisped up a little.
