Ha ha, yes, please raid my garden, the okra pods are taking over.
I did pick okra today and baked them with a little olive oil, salt, pepper, and a little Tonys Chachere's creole seasoning. I preheated the oven on 350F (oops, 400F next time) and baked exactly 10 mins. The olive oil really gives them a good flavor, but I didn't use much oil because I wanted to keep the calories down. My eating plan is low carb with some thought toward limiting the amount of calories.
I thought they were really good, and I thank you for posting this idea FMN. I will certainly use this recipe many times for a quick snack.
Low carb, low calorie, plenty of micronutrients; just about perfect for a snack. A problem I have had before doing a low carb diet is finding quick snack foods when I want them.
I might try them on the grill also. Thank you.
Laura W, have you really lost 90lbs on a low carb diet? Wow! that's impressive.
