I, too am veg, was vegan for a while, and hopefully will morph into vegan again eventually....Anyway, yes, food diversity is hard sometimes. Although, I do make some exceptions as to the allowed foods. I know I'm just have to deal with the fact that it will take me longer to overcome the carb cravings, but hey, it's better than giving up altogether because it's too restrictive! Here are some foods I've picked up recently:
Wasa crackers - eat with peanut butter or cheese
Peanut Butter
Nuts, especially peanuts and almonds
LC tortillas - quesadillas, wraps, or some say you can bake and make chips
Lindt 85% chocolate - as a treat infrequently
LC yogurt
(of course eggs, a variety of cheeses, cream, mushrooms, cucumbers, avacadoes, salad greens)
My favorite breakfasts are omelettes with mushrooms and feta cheese, LC yogurt,
Some good snacks are celery dipped in cream cheese or ranch or peanut butter, string cheese, steamed brocolli with melted cheese, the onion/garlic flavored roasted almonds, mixed nuts, wasa crackers and cheese
Lunch/Dinner for me are unexciting, and mainly larger portions of snacks or I'll have a quesadilla, stir fry, a big salad with cheese and hard-boiled eggs,
As I am writing this I know I eat much more than this, but must be blaking for the moment being. I will try to think of more. Let me know if you want more detail about anything, everything I make is very easy (I'm not much of a cook, either) so I hope you wouldn't have a problem with it.
