Great Milk Substitute
I just discovered a great milk substitute product that works for a lot of things. It's Califa Farms Toasted Coconut Almond Milk Blend. Gluten free, lactose free, 0 sugar. 8 oz of it has 50 calories, 4.5g fat, 1g protein, 1g carb. It has 50% more calcium than milk. I first saw it at Whole foods, now I'm seeing it in local markets too. It's sold in a unique bottle that looks kind of like a milk bottle, and it's refrigerated. Expensive though...ranges from $3 to $4.50 for 48 oz of it, but I use it sparingly and it lasts a long time for me. It doesn't really taste much like coconut despite the name, but the flavors of almond milk and coconut milk blend really nicely and are similar enough to milk. I've tried various things with it (instead of milk) and it's great. My next thing is to try tapioca pudding, using liquid splenda to sweeten, and otherwise it's just this milk, eggs, tapioca so this could be a good Atkins dessert if it works.
This company makes other milks too, like plain almond milk, etc. Some have a bit more in the carb count, but this is the only one I've tried. I like it so much I haven't bothered to try any of the others.
