Simply Incredible Spinach
I started with frozen spinach -- you can use fresh if you rinse it and have a small amount of water clinging to the leaves.
16 oz frozen spinach
about 1 oz parmesan
2 Tbls butter
2 Tbls cream
Melt butter in a skillet large enough to hold the spinach. Add spinach, cook over med-high heat until the excess water is gone. Grate about 1 oz of parmesan on top, add cream, stir to combine. Add pepper and salt to taste and serve immediately.
The right amount of parmesan is determined by taste. Taste the spinach -- if you can't taste parmesan add more. You should be able to know that what you are tasting is parmesan, but someone who doesn't know it has been added should have to pause and *think* about it to know that is what you added. With just enough, and not too much, you have an incredible dish.
I ate half the skillet by myself (half the spinach, too ).
