5-Ingredient Pancakes
Kate's Quick 'Cakes
1/4 cup Soy Flour
1 egg
a pinch of Cream of Tartar
Cinnamon to taste
Cream
Yield: 1 medium pancake
Carbs: ~6 per pancake
(one does it for me for breakfast)
Mix flour, tartar, and cinnamon together and mix well. Beat in an egg white and beat well, then add the yolk. Add enough cream (water might work okay too) to desired consistancy. Pour onto buttered griddle and have your pancake!
I know that a lot of people don't like the taste of soy flour, but it was a lot cheaper than almond flour so I decided to just try it out. The cinnamon is to mask that taste and it did so pretty well for me. Also, I'm not much of a cook/recipie wizz so baking soda/powder might work better as well, I just don't have them in the cupboard right now, but will try with them later. The pancake didn't rise up too much, but it cooked very evenly and was very bready and dense, just what I had been looking for. Delicious with a bit of peanut butter, yumm!!!!
Feel free to make renditions, as I said, I'm not the most genious cook, but I'd love to hear what you think, and how to make 'em better
