Default Peanut Butter and Jelly HooHa!

OK. I made this last night and it was Mmmmmmm. Your Mmmmilage may differ!

This is similar to a stock Mock Danish (on Steroids).

2 oz softened cream cheese
1 egg
1/2 packet Splenda
Vanilla to taste
dash of lemon juice
1.5 tablespoons of Peanut Butter

Mix all together well and nuke 2 minutes on high.

After it cooled I added 1 teaspoon of Sugar Free Blackberry preserves on top and spread it around to cover.

I make mine at night so I can take it to work for breakfast the next morning and eat it cool. The hint of peanut butter and jelly really made for a good flavor combo. The flavor is so intense you could probably do with a little less of the SF Preserves.

I just thought of a great idea. Mixing fresh rasberries with peanut butter, that would be great!

I don't believe you can have nuts or fruit on induction.....so that rules out both.

Mister E - this was breakfast today (after I got some low carb strawberry jam last night). Very good - think I'll make a double batch next time. Thanks for the recipe!
