Default Punkin "nut" pancakes!!

Ok, these are a take on my chocolate pancakes. Very good just for a snack. I ate mine for dinner with a lil' whipped cream. The left overs, they are going with me to work. I will eat them cold....Many ways to enjoy 'em! There are no actual "nuts" in these, although you could put them in if you want. The flax meal lends a slight nuttiness by itself.


1/4 c flax meal
2 scoops whey protein powder = around 1/2 c

(I use unsweetened vanilla flavor)
2t baking powder
pumpkin pie spice to taste (I don't measure spices)
1/2 c pumpkin puree
1/2 c part skim ricotta
2T buttermilk (this gives best flavor, and is only 12 carbs/cup)
2 eggs
1t liquid stevia PLUS 1t splenda----->for the sweetener, you will have to taste and use the amount that best suits your taste.
1-2T water to thin

In separate bowls, mix all dry ingredients, and all wet ingredients (except water). When finished, add the wet ingr. to dry. Mix well. Cook 'em up! They are great any way you eat them!
This whole recipe is about 20 carbs, and these are VERY filling

PS: this batter is thicker than "normal" just plop the spoonful of batter on hot griddle and spread around til the right thickness.

I tied this today but used 1/2 cup mascarpone instead of riccotta. The batter was coming out really thick ands lumpy. I added some DaVincci spice syrup to thin it a bit, but it was still a tad thick.

I thought about it a min, then threw in some pecans and cooked the whole thing in the microwve like a cake. Then whenit came out I topped it with cream cheese frosting, yummm
