Role of fat/oil in diabetic intake
Hope there is some of this you might investigate, David.
My 2-hour postprandial reading today was 115, which is down a good 20 to 30 points for me for the following reason: I have replaced more of my protein intake (carbs very low at around 20 or less per day) with fat, specificaly extra-virgin olive oil which also helps with my arthritis as I believe reduces general inflammation.
I decided to up the olive oil intake to avoid the insulin response from eating too much protein, for me, and following Dr. Barry Groves advice to follow a moderate-protein, high-fat diet, and it has made a difference. I also had been using coconut oil for cooking and for making chocolate bark and using lard to cook with too, so the EVOO was additional and in fact was at a time I added significantly more carbs in the form of salad greens and vegetables.
So now in a fat-burning mode, getting enough fat and increasing the fat to about 70% to 80% of my diet along with protein and about 4 cups of vegetables a day, the BG is coming down.
I understand that 115 two hours after a meal is not bad.
This is just an aside--if I were not treating my diabetic cat I would not have my trusty ReliOn Micro meter from Wal-Mart either as I still have that character flaw where if I don't know about it, then perhaps it does not exist. LOL but I have no excuse what with testing Kipper two and three times a day.
