Default Egg Nog

I just made this and it is SO good! It is also an excellent post workout drink - high in protein. I'm posting for a single serving, because I like it fresh, but you just have to increase quantities to make a large batch. Measurements are not precise.

2 egg yolks
3/4 cup low carb milk (homo or 2%)
splenda (1/4-1/2 packet)
large pinch nutmeg

Blend on low for a few seconds. Yum!!!!!!
For a real treat add a spoonful of rum or other alcohol.

This is a great idea help skip Christmas treats. After dinner or whenever the "big" treat fest is, give yourself a glass of eggnog with rum and hold on to it, having sips throughout the evening/day/whatever. Save your cheat treats for a time when it's worth it, rather than having some every time!

Hey! You are so smart!! Haha Ive seen lots of LC versions of egg nog but I HATE using whipping cream (I think Im sensitive to dairy). I only have fat free Carb Countdown right now, think it would make tons of difference? Sounds like it would be a good way to get protein in after weights too no?

I've never tried the fat free countdown.. I guess if you like the taste it would work! The yolk should provide some fat for flavour. I like the 2% for the egg nog better than homo because homo is too rich, but love the homo for making yogurt.

Thank you so much. I was just thinking about egg nog the other day when I was in Walmart looking at the lack of low carb nog!

Think using Eggbeaters would work? I haven't tried it yet, but I was planning on combining Eggbeaters, some half-and-half, and/or maybe some LC milk.

I made some last year out of Eggbeaters and heavy whipping cream. Man, was it good, but probably a week's worth of calories!

I've never had a prob with raw eggs... using them in shakes or anything. Check out what www.mercola.com has to say about raw egg yolks.

Of course I don't use eggs that have been sitting in my fridge for ages... and when I buy them to eat raw, just for peace of mind I go for the seemingly higher quality and organic grain fed etc stuff.

I'm also careful not to let the yolk come in contact with the outside of the shell... as that is where the harmful bacteria would be.

I can't say whether using egg beaters would work, I've never tried them and don't know if they taste exactly like raw egg yolk without the white, or even if you would care I personally would not use them....but I am not discouraging experimentation
