Hi Nan,
I guess the thing Pennink and I probably didn't say on the sodium thread was you become an almost religious label reader when you are trying to eat low sodium and low carb. Make your own chili seasoning, buy sodium free tomato sauce and then you might be able to get away with the sodium in the hot dogs if you are really craving something like this casserole. Also, in my research for CHF, I discovered that you can get low sodium cheese much easier in the United States. I don't have the links right now, but if you check out the CHFpatients website and google low sodium cooking you should be able to find it. Me, I just don't eat any processed meat and that always keeps the sodium way down.
