Hi Me,

I get my Soy Protein Isolate at the health food store or at Trader Joe's. Unlike soy flour, it's a completely flavorless powder that has some flour-like tendencies without the carbs. It's much cheaper than Atkin's Bake Mix and comes in a jumbo sized tub for about 8 dollars.

These pancakes do take speciality ingredients, but you can use this stuff in LC Bread and other low carb baking recipes. I have substitued SPI for Whey Protein in some of Diana Lee's Baking Low Carb recipes (works great in Gingerbread) and been happy with the results.
