Yet another side note.
The mayo and bacon fat mix can be a base for many things.
You can easily flavor the bacon fat by taking the clean drippings and pouring them into a warm pan and adding herbs and/or whole spices, the warm bacon fat draws out the flavors.
Italian herb blend for instance, gives the mayo blend a pancetta like flavor, if you add crisp fried thin sliced ham cut into strips you would think is IS pancetta, a dollop on top of a chicken breast is pretty tasty
