That's what I was going to say.
To emulsify it, you put the vinegar in a bowl first, then drizzle the oil in very slowly as you whip it as fast as you can. Then add your spices, herbs or Blue Cheese (if you like it) .

ps don't use white vinegar when there are so many good tasting ones like wine vinegar or apple cider vinegar.
