Chicken Italian Style II

From Monday to Friday cookbook

1 tablespoon olive oil
1 skinless boneless chicken breast half
1/2 tablespoon minced garlic
2 tablespoons chopped fresh basil
2 tablespoons dry white wine
1/8 teaspoon dried rosemary, or marjoram
1 tablespoon capers
1/2 cup Italian-style canned diced tomatoes
salt
freshly ground black pepper

Heat the oil in a skillet or wok. Add the chicken breast and saute the chicken for 3 to 4 minutes.

Add the remaining ingredients to the skillet and bring to a bubble and simmer uncovered until the sauce is reduced.
