This morning, I took the iron skillet that I cooked pork belly in, yesterday..
and i threw some sandwich ham in the fat, put a couple of slices of salami on top of the ham and let that cook for awhile.. rendering fat.
then i cracked a couple of eggs on top of the salami and covered the pan and let that all cook in the seasoned pork fat..
when the eggs whites solidified, i placed a sliced of cheese on each stack.
covered. took off the fire and let the cheese melt.
i put one stack on each plate.
when my friend was ready to eat, all I had to do was heat it up in the microwave..
simple, delicious, high protein, high fat meal..
it will keep me satiated for about 7-8 hrs.
