Skillet Taco Cauliflower Rice


This recipe is fantastic. Definitely a keeper. I imagine it would freeze well, but I don't imagine having enough leftovers to freeze.

I substituted beef for the turkey, and I didn't have any tomato sauce, just pureed frozen tomatoes - came out just fine. I imagine you can sub frozen cauliflower crumbles, too.
