Health food stores and fancy grocery stores sell mayonnaise made with a variety of oils. But in my opinion, they never taste right. I think if you're going to go to all the trouble of getting special mayonnaise, it's worth it to make your own.

After experimenting with a wide variety of fats, I've come to the conclusion that chicken fat is the best fat for making mayonnaise.
