Local Farm to Table restaurants will sometimes fry in Duck Fat or Lard, I haven't asked about beef tallow or seen it yet on a menu. Side at Mothers Day brunch was potatoes wedges fried in duck fat... rare treat.

For a chain, Buffalo Wild Wings claims to fry in Beef Shortening. How that differs from tallow..no idea. But they openly note the beef shortening on their menu, so the HQ should be happy to explain.

You can always buy tallow from Fatworks or US Wellness and make your own
