Sounds good to me! I don't know what the original proportion of sugar would have been, but if it needs a bit of sweetening to achieve the right flavor, you could use a drop or two of a splenda type liquid sweetener. I buy one for my cole slaw dressing (because I like sweet dressing). The liquid splenda (unlike the powdered ones) has no carbs, and to me it tastes as good as sugar would taste. As for the buttermilk, I'm not sure about that. You could add a bit of greek yogurt perhaps.
