Fried some today that were almost ripe. Good, perhaps too good! Frying is better than baking or drying IMO but higher in calories.
Would put them in the class with sweet potato fries that I had to give up because they were so more-ish

My potato starch arrived today and I ordered some plain "Tiger Nuts" to experiment with next
