hi Tomo,

Yogurt and Kefir both start out as milk, and both have a live bacterial culture added to induce fermentation. The difference is in the type of bacteria used ... which ultimately affects the texture and flavour, which are very different between the two. Kefir isn't as thick, and has a flavour similar to buttermilk. Also, kefir is made with a larger variety of bacteria in its culture ... as opposed to yogurt which often contains only one or two (acidophilus and/or bifidus).
