Hi Blondie,
I use fresh or frozen and thawed shrimp for the rolls.
And Wa'il, the nori does not have to be softened. If you don't have a sharp knife, the rolls will be difficult to slice. If you let them sit for a few minutes, the nori will soften, but the rolls will still tear a bit if you don'y have a sharp knife. An alternative is cutting the sheets into 4 pieces and using them to scoop up the filling.
