I've recently found beef heart ground up in a food processor with a bit of liver is easy to hide cooked with regular ground beef in Texas style (no beans) chili. Tried the same thing using beef kidney with less success; taste was fine but it had an off smell like a men's restroom. Perhaps it's traditionally soaked or treated in some way to eliminate the interesting smell.
