Default Avocado Chicken Salad

This is something I came up with a few months back while racing a bag of ripe avocados. I've made it quite a few times now, and bought some avocados just so I can make a batch this week.

This is for one serving, but it can be multiplied to make as many servings as needed.

Ingredients
50g celery
10g green onion
125g leftover cooked chicken
90g avocado
13g mayo
salt and pepper to taste

Finely dice celery and green onion, shred chicken. In a bowl, mash the avocado with mayo, then mix in salt and pepper. Mix in veggies, then mix in chicken.

Now you have a lunch or dinner main dish in about two minutes.

Macros vary depending on chicken used, and mine's about 13g carbs with 7g of those being fiber.
