Thumbs up Breakfast Bites

I commute nearly 2 hours to work everyday so preparing breakfast can be a large task. I came up with a way to make breakfast for a week in one day.

6-large eggs
Crumbled cooked bacon, sausage and ham (or anyone you pick)
Shredded cheese
Diced onions, peppers or tomatoes (optional)
Mini muffin pan

Place a teaspoon of meat into each cup of the muffin pan
Then add your choice of veggies
Beat eggs in a liquid measuring cup with a spout
Pour egg mixture just a little over half way (eggs will puff up)
Top with shredded cheese
Bake in the oven 350 for about 10-12 minutes (watch so they don’t burn)
Let cool, wrap each in plastic wrap. Heat as needed refrigerate the rest.

**For families without low carb dieters take refrigerated flaky layered biscuits, divide layers in 3, press into pan..Then fill as above.
