Default Cinco de Mayo

Anyone else having fun thinking about eating today for Cinco de Mayo. I just enjoyed a great lunch - browned some 85/15 ground beef in a sauce pan with some bacon drippings. After the meat had browned I added some salt, garlic, chili powder, and then a few spoonfuls of my cousin's homemade salsa. Added to it a small glob of peanut butter. After I stirred it all smooth I put in a bowl and topped with some shredded cheese. I'm not a drinker so I don't miss that part and just had fizzy water from my soda stream. For the "crunch" provided usually by the accompanying tortilla chips I had pork rinds!

I even took a nice picture of it but when I tried to upload here I got the usual:

I think I've been getting this message for over a year now when trying to upload a picture. I've reported it (as have others) but guess it's not being addressed in any way, so you'll just have to take my word for it that it looked and tasted great! Roughly 8g net carbs for the whole thing, my first meal of the day.

So now I've had my celebration. Today is also my sister's birthday and she tells me she went out and bought a dozen cupcakes for her birthday dinner celebration. Fortunately she's far away in North Carolina so no temptation for me, LOL. But since my sister is 6 feet tall and 145 pounds (which she considers abysmally fat. She was always 120 pounds her whole life until she hit menopause) I guess she can handle a cupcake. They got Mexican Chocolate cupcakes to go along with their Cinco de Mayo birthday dinner. Hmm, wonder if there is a LC version?
