Breakfast was a mental hurdle for me. I realized that I could make a big batch of crackslaw (which I love) and eat it daily for breakfast, it freezes well.

(www.crackslaw.com, or many other recipes online) - if you switch out coconut aminos for soy sauce it's AIP.

In the end I didn't eat it as often as I thought I would, but it was a key part of my mental shift, knowing I could figure out a breakfast that was compliant, made ahead & that I liked enough to consider having it most days.
