Hey, I tried making my own low carb energy bars today, with mixed results. And like Ms Tunnidiff says in the article, they don't taste "too bad".
1 1/2 cup almond meal (ground from raw almonds in my food processor)
3/4 cup flax meal
1/4 cup powdered unsweetened baking chocolate
1/4 cup creamy peanut butter (unsweetened and non-hydrogenated)
1 stick butter
1 egg
Preheat oven to 375 F. I melted the butter and PB together in the microwave while mixing the dry ingredients together in a bowl. Poured the PB/butter mix into the dry ingredients while stirring. Worked them into a stiff paste, then added the egg and thoroughly blended it all together. Add salt to taste if you wish.
Spoon onto a cookie sheet like you're making oatmeal cookies and bake for 10-12 minutes. They come out a bit dry and crumbly, which will work fine as is for "granola", but the recipe needs some work if they're going to be chewy bars. Anybody got any ideas? ![Help](/images/smilies/help.gif)
