You need to use an oil that can tolerate the heat required for deep frying. If you heat an oil to the point where it produces smoke, it damages the oil, making it unhealthy for you to eat.

The best oils to use are "expeller pressed." Look for those words on the label. I like peanut oil for deep frying, but there are other good oils, as well. Check the chart at the link I posted for the maximum temperature for each oil.
