"Honey" Mustard Coleslaw
 
I eat coleslaw all the time! I love it! Crunchy, low in carbs, high in volume. I came up with this variation today and it was a keeper.

"Honey" Mustard Coleslaw - 1 serving, 5g net carbs

4 oz coleslaw mix (2 big handfuls)
2 T mayo
1 tsp Dijon mustard
1/2 tsp cider vinegar
dash of celery salt
black pepper, to taste
1 packet splenda

Mix first 6 ingredients well. Sprinkle a little Splenda over, mix well and taste for desired sweetness/tartness.

I used about 1/4 packet at most. You aren't really trying for an overly "sweet" taste. You want to be able to taste the bite of the Dijon and cider vinegar and just a hint of sweetness.
