Low Carb Jalapeno "Fudge"
This is like a crustless quiche and good warm or cold from the fridge! It's called "Fudge" because of it's consistency.
1 lb grated cheese either cheddar or a mix of jack and cheddar 1 egg (beaten) 1/4 c. jalapenos or canned green chilils (diced) crumbled bacon (optional) Mix well and pour into a 8X8 square pan or round single layer cake pan. Be sure an use ample pan coat and you can also oil the pan as well. Bake in a pre-heated 350 oven till the top is slightly browned Cut into squares after cooled and refridgerate leftovers. Great with a green salad on the side. If you double the recipe use 2 eggs and up the amount of jalapenos to taste. If you don't like spicy, up the crumbled bacon and leave the jalapenos out. ~~~bella :clap: |
