Mini Zucchini Pizzas
 
Saw these a few weeks ago, and wife and I had them last night. Really good tasting, easy, and low carb. There are many recipes you can find on line, but the basics are zucchini slices with tomato sauce, spices, peperoni and mozzarella cheese, cooked until the cheese melts and starts to brown.

I am very skeptical of recipes that attempt to mimic a high carb food, but this one was spot on.

Saw a similar dish, recreating lasagne using eggplant as the base rather than noodles.

For zucchini lasagna or for the pizza idea, you might want to try to get some of the water out of the zucchini. I slice it, rub salt all over it, let it sit for a bit, rinse well in a colander, then dry with paper towels. You can further dry it by frying it briefly. That helps prevent it from turning your recipe into soup in the oven. Also, use the thickest sauce you can find... or make. Simmer it down as thick as you can.

It can be a lot of work, but if you make a big batch, it freezes really well.

But add capers, olives or pickle to the basic mayo, celery, onion. I'm usually not a fan of tuna but bought a can this morning to try her version. :lol:
