Need Travel Friendly Non refrigerated Food Ideals
 
My daughter and I are going to visit my sister and her family in March via the train. The first time we went by train I was Atkins. This time I am going to be traveling vegetarian. So, we're gonna be on the train with a cooler and a bag. So, what non-fatting foods could I bring, including snacks? We're talking breakfast, lunch, dinner, snacks and probably one more breakfast. Any ideals?

Leasmom, I 'train' it a lot (5+ hours from my house to NYC).

A couple things...if you bring a small cooler, you can always get a couple cups of ice from the Amtrak snack bar guys to 'refresh' the cooler and keep it cold.

I don't remember if you've eliminated dairy, but if you haven't, single portions of yogurt or cottage cheese should survive in the cooler for 18 hours or so. The thick Fage greek yogurt has more protein than regular yogurt, but you can always ramp up the protein in yogurt by mixing in a bit of protein powder...makes a kind of protein pudding. I'd also bring some hard-cooked eggs to eat the first day, and maybe some oranges or travel-hardy fruit. Also a bit of hummus, either with regular chickpeas or edamame (soybean) hummus travels well and makes a good dip/sandwich spread. Things like celery sticks and baby carrots are good for dipping. If you are eating dairy, something like Pimento cheese (shredded cheese, pimentos and mayo mixed together) would be fine on the first day, and a non-mayo cheese spread or something like mozzarella, sundried tomatoes and olive oil will go with limited refrigeration for up to 18 hours.

Also, GNC stores sell those Stallone Protein Puddings that apparently taste okay and don't require refrigeration.

I also would pack things like string cheese, nut mixes (almonds, walnuts, peanuts, pecans), soy crisps, baked cheese crisps, sunflower seeds, nut butter and low carb tortillas--none of which need refrigeration. All of them can make a meal...peanut butter on the low carb tortilla, or sliced string cheese on the tortilla, or the soy crisps and peanut butter or hummus. Edamame, shelled and green or roasted, are good snackers.
