Low Carb Potatoes, Anyone?
 
Check this out. A farmer is growing low carb potatoes! I wonder if it's for real......

I don't know.... And you notice it claims 25-30% lower carbs then a russet, b ut doesn't state how many. I have a feeling even at slightly lower carbs it would still be very high GI.

If they have 30% fewer carbs in then what are they made of? Potatoes are nearly pure starch. Strange.

The interior of a Potato is pretty much Starch and Water. So, my guess would be they have a lower ratio of Starch to Water. As for the GI as another user mentioned. Candian Potatoes tend to have a marginally lower GI than American Potatoes, even for the same variety.

This is has nothing to do with the lc potato but as I was scrolling down I noticed the ad for the Eat meat Not wheat mug. I never did understand that slogan since Atkins promotes eating wheat, right? I mean the lc oatmeal I eat has wheat, soy and flaxseed. I know it rhymes and all but it never made sense.....

Atkins says to keep Grains to a minimum. That would include Wheat, Oats, Barley, Rice, Corn, etc...I don't know what's in your "Oatmeal," but REAL Oatmeal is made from Oats, not Wheat. As for the slogan...it sounds like they were trying to poke fun at Vegetarian/Vegan Slogans.

I have ordered the «eat meat not wheat» t shirt, and it's pretty cool...people at the gym where I work have been asking plenty of questions about it, since lo carb isn't very much known here in Quebec...
I think that the slogan was made for the paleolithic diet (which does not allow grains such as wheat).
