Chicken & Broccoli (or Spinach) bake
Sorry I dont have any exact measurements for this but it's incredible and VERY easy ...so give it a try. The amounts listed are estimates and can be varied according to taste. (this mix is used in a crescent-braid that I bring as an appetizer to parties but, sadly, I cant eat it that way any more so I decided to enjoy the portion that was suitable for my diet.
Your basic goal is to create what will look like a semi-dry chuncky chicken salad mix that you will then bake in the oven...so the amounts used will depend on how many you are feeding and personal tastes. Ingredients: 4 cups Cooked Chicken (cut into small chunks) 1 cup Chopped Broccoli (I use the frozen) 1 cup Chopped Spinach (optional but personally can't make this without it) 1 tablespoonGarlic (powder or crushed) 1 tablespoonDill weed 1.5 cups Cheddar cheese (shredded-loose...dont pack it tightly) 1/4 cup Parmesan(shredded) Mayonaisse (base amount on mixture consistency...should look like a semi-dry chicken salad mix when done) dash salt & pepper Mix all ingredients in a large bowl (add Mayo last) then pour into a casserole dish... Bake at 350 until cheese is melty, then stir mixture once Bake for an additional 10 minutes. Serve with salad Also good cold on bed of lettuce. Let me know if you try it...Cant tell you how often it's requested by family and friends for parties (of course they want it in the crescent-braid form, but such is life) (sigh) |
Do you have to have the brocolli or is that optional? Where I'm living you have to take out a loan to buy broccoli and cauliflower along with other veggies??? This sounds good!!!

No...Broccolli isnt required...you can use any veggie that's convenient (I've made it with just spinach, with asparagus, and with a mix of veggies once that included carrots (dont know how it would be with just carrots or completely without veggies but I imagine it'd still be good.) Let me know if you try it.

quick note
Another quick note...If you like dill (and I do) you might increase the amount of dill...I tend to like it fairly strong. The amount listed is recommended but, if I was to be honest, I'd tell you that I use double what is shown. If forced to use dried dill weed...I use even more. You can taste the mixture prior to baking and increase both the garlic and dill to taste.

Might be a dumb question but.... do you use the broccoli frozen or thaw it out? I'm just thinking about H2O content... also raw would work too right? The recipie sounds awesome and I know just by looking at it that I would add TONS of garlic... we all love it!! :yum:

I thaw it out...Not only does it reduce a bit of the water content, but when it's frozen...it's harder to mix it in properly with the other ingredients (I tried that too...LOL).

Using Fitday.... and taking into account that the totals would be guess-timate since people will increase or lower certain ingredients to taste...I got 19 carbs with 3 gr fiber for the whole dish. Total calories were 3400 for the dish...which could be reduced by minimizing cheese and mayo.

Just wanted to say I've added this to my regular menu items. It's sooo good! My boyfriend ate half of it last night. :o
