Prawn and coconut balti
 
Serves 2

Prawn and coconut balti

1 large onion, sliced
1 tbsp groundnut oil
Small piece of ginger, peeled and grated
1 Large garlic clove, crushed
1 tbsp Paprika
½ tsp Turmeric
½ tsp Cumin (ground)
½ tsp Ground coriander
1 tsp Chilli powder
Salt to taste
5 ripe tomatoes, skinned, deseeded and chopped
165ml (¼ pint) coconut milk
340g (12 oz) raw king prawns
Fresh chopped coriander (a handful)
Juice of a lime, plus an extra lime to serve in wedges

In a saucepan, gently soften the onion with in the oil for a few minutes, along with the ginger and garlic. Turn up the heat and allow the onion to brown slightly. Add the paprika, turmeric, cumin, ground coriander, chilli powder and tomatoes, and cook down until you have a sauce. Add the coconut milk and very gently simmer for 10 minutes; check the seasoning. Add the prawns and lime juice, cook for 5 minutes and check the seasoning again. To serve, sprinkle the fresh chopped coriander over the top, and add a couple of lime wedges on the side.

Now this one's right up my alley! I have a wonderful little Balti cookbook I got at Half Price Books in Houston years ago and I just love the recipes in it.

This is making me drool too! I have everything needed to make this as well, except the turmeric and may be short a tomato or two.....wonder if that would totally mess up the recipe?

Oh, turmeric changes a dish so much, I'd wait until you can get some, freckles. It's available in any grocery store, McCormick's better line of spices.

Thanks Demi - I have just scoffed this, and it was so delicious I wanted to eat the plate, lol. I didn't have all the ingredients to hand, so I used:

Prawn and coconut balti

1 large onion, sliced
1 tbsp oil
Small piece of ginger, peeled and grated
1 Large garlic clove, crushed
1 fresh chili
1 dessertspoon paprika
1 tsp curry powder
½ tsp Cumin (ground)
½ tsp Ground coriander
tin of chopped tomatoes (mine had 14g carbs)
165ml (¼ pint) coconut milk
225g raw king prawns

If someone didn't have the coconut I think 1-2 tblsp of cream or yoghurt would work too.. And extra curry powder or garam masala could be used instead of the coriander, cumin and ginger. Indian spices are fairly interchangeable, I think.

It was really quick to make using the chopped tomatoes, as there was no need to reduce the sauce. Fresh would have tasted different though. We served it with spinach wilted in butter, and we couldn't eat all of it. There's a generous serving left for tomorrow.

The values for 1/3 the recipe with the ingredients I had are:

17.4 carbs
16.9 protein
21.4 fat
1.4 fibre
311 calories

I cannot believe how filling it was when it has so few calories, but we did have a good lot of spinach and butter with it.

We're still loving this recipe. It has become a regular feature. We just use tinned tomatoes, as the fresh are not so good at this time of year. :D

We make this recipe into 4 servings and serve it with a side dish. We use canned tomatoes instead of fresh, and for the whole recipe, the counts are:

52g carbs 51g protein 64g fat 4g fibre 935 calories

I need to bump this awesome recipe, as I couldn't find it through a search or in the main dishes index.

I tried this with tofu instead of prawns, and added garden kale, and it was delicious.
