The elusive LC GF bread
 
Well I have made about 30 loaves of bread now and they have all been pretty much a failure. I am starting to believe it is impossible to make a Gluten free, lower carb loaf of bread that actually tastes like bread :lol:

Does anyone have any tips or recipes? :help:

It doesn't have to be super low carb - Up to 10g a slice is fine by me. As long as it is gluten free.

Jess I stopped making bread and put away the bread baking books about 18 years ago. However, I can find low carb breads in the grocery store, thin breads with about 8-10 carbs. These are about 3.5 inch rounds and 1/2 inch thick; these are pre-split for a sandwich. For my teens, not me. I cannot eat bread without triggering a binge. I also found sliced breads, perhaps one at 10 carbs PER SLICE.

Sorry I dont have any recipes to share.

If I were to try to make such a bread I would consider using finely ground bran and gluten. The gluten gives that sticky stretchy property. Otherwise I have heard of breads using whipped egg whites folded in. I have not tried any of these.

Cake is a cup, is one I did make using bran. It is like the baked beans brown bread that is heavy. Usually I added cocoa to make it chocolate rather than bread. Maybe add anise seed or fennel or similar to make it like a heavy rye.

I have made the focaccia, "sliced bread", and cheddar biscuits from Buttoni's site (a member here as well) with repeated success. I use the cheddar biscuit recipe for hamburger buns as well. I've made several things including hot dog rolls from the focaccia recipe...it may not be like a yeast bread, but it's good nonetheless and gluten free. the variation potential on that bread is big, I've even done a bacon cheddar version and it was excellent just hand to mouth with nothing else on it or sandwiched...very filling too.

None of those I mentioned above are loaf breads . She doesn't have many loaf breads on her site. I've tried making the jalapeno cheese bread loaf and it was good, but not what most of us are looking for when we think of "bread" that we miss on a gluten free or a low carb diet. I haven't tried her other loaf bread offerings yet. She does have gluten free ingredient substitutions on some of the recipes.

One trick she uses is to add some yeast to a recipe. Not for the rising effect, but for the flavor. She writes for a series of low carb cookbooks that you can see the link for in her recipes. She may have a recommendation for one of the books that has a tried and true gluten free low carb "real bread" tasting recipe.

My wife and I buy some low carb bread options right at Walmart, but I dont think any of them are Gluten free.

The animal shelter had so may bread machines donated to the thrift shop that they began throwing them away in the dumpster. They must have had 8-10.

Sara Lee Delightful Multigrain has 13 carbs for 2 slices, 6.5 carbs per slice. It can be found at Wal-Mart.

I think the issue is "gluten free" for JessAus, not just low carb.

Yes, I am starting to think it is just not possible - I guess if it could be done there would be a commercial product :q:
