Sugar free Marmalade
 
I'm recently over from Low Carb Friends and I'm not sure if I'm posting correctly. I'm looking for an easy sugar free marmalade recipe, probably similar to a refrigerator jam.

Super easy.
Take a couple of oranges, peel off the zest and slice it into fine strips.
Cut the white pith off the flesh and cut the segments away from the membranes. Place the flesh and rind strips in a pan, squeeze any remaining juice from the membranes into the pan and add your sweetener of choice to taste. Bring to a gentle boil and sprinkle a teaspoon of psyllium over the top. Stir well, turn off the heat and leave to cool a bit. Jar the result while still warm. Keeps 2-3 weeks in the fridge.

I had a look at the amount of natural sugar in oranges, it's quite high. No additional sugar is added in your recipe but I plan to sweeten, if necessary, with stevia granules/powder. (Pyrue). On the store purchased jars of sugar free orange marmalade the serving size is 1 Tablespoon so it wouldn't be a lot of sugar, but still, could the natural sugar in the recipe cause a rise in my carb count?

You would have to input your ingredients and measure the finished product to get an accurate count. 2 oranges are about 50g carbs. Other ingredients are trivial amounts, maybe 10g in total, but fibre will be about 30g if you deduct it.

I do deduct fiber, so 1 TBL of the approximate remaining carbs would be doable. That gives me a clearer picture of what I'm eating. Thanks.
