what's a good substitute for applesauce?

I second the chayote. I haven't made it in a long time, but I diced it, cooked it on the stove and ate it like baked apples. You could probably cut it in half, microwave it until soft, mash with a fork, then add your butter, cinnamon and sweetener to taste.
