I was in the store today and noticed that walnuts have 3g of carbs, 3g of which are fiber. 0g sugar. Would these be ok in general? In induction?

I suspect the manufacturer has pre-subtracted the fiber, so those walnuts contain 3g carbs that contribute calories AND 3g fiber in addition. Not 3g minus 3g = 0g ;)

Since fiber is not absorbed and does not contribute calories, more and more manufacturers are now pre-subtracting the fiber before calculating the carb content of the food. It's just confusing because not all manufacturers are doing it ... yet.

As for "are they ok for Induction?" the answer is no. In the latest edition of Atkins NDR (Dec. 2001), he clearly states that nuts and seeds are not permitted during the 2-week Induction period. However, they're fine to have afterward, when you're following OWL.
